Kosher Jewish Shochet Slaughter Shechita Knife DIMENTST KOWNA 11.25” Blade

This was purchased at the same time as our J & D Miller kosher knife listed for sale as of now in our store here at Uniquitees on eBay.
First the blade is razor sharp! Second it’s a longer blade at 11.25 inches and with handle measures 16 inches. We believe it’s a kosher knife for killing a cow (as opposed to the smaller one which is for chickens). We have googled, tried to translate “DIMENTST KOWNA” and figure it’s the maker’s name - probably in Yiddish. Knife likely dates around 1900 but could be mid 1800s as well. It’s got some rust spots and the handle does have a hole in it (see photo) but this is likely a rare knife from “the old country”. Would have been used by a Shocket or kosher butcher for large family or a village.
Will happily include more information if anyone out there can identify DIMENTST KOWNA for us.
After some research, we think that the because of the spelling, it is Polish for Dimentst (a family name) of Kowna (Kaunas) a village that was heavily influenced by the Polish community. The town hosts one of the newest “old world” synagogues founded in 1872. This is still ongoing research and any information you may have is appreciated.
